Chapter 1: Understanding Arugula

Arugula is a leafy green that behaves less like lettuce and more like a perishable engine. It is a member of the Brassicaceae family, the same botanical family as cabbage, mustard, and radish, and that lineage is the key to understanding everything about it. The familiar peppery kick comes from glucosinolates, the same sulphur-containing compounds that give mustard and horseradish their bite. When you chew a leaf, an enzyme called myrosinase mixes with those compounds and produces the sharp, volatile isothiocyanates that register on your palate. This is not a subtle background flavor. It is a chemical defense mechanism that the plant evolved to deter insects, and it is the primary reason arugula is used in such a distinctive way in the kitchen. You are not tasting a mild salad leaf; you are tasting a plant that is biologically programmed to fight back against being eaten.

Understanding this biochemistry is not academic trivia. It explains the two most common complaints about arugula: that it is sometimes bitter and that it loses its punch quickly. Bitterness in mature leaves is a different chemical pathway, primarily driven by sesquiterpene lactones, which tend to accumulate as the plant gets older and as it experiences water stress. The pungency, on the other hand, fades as the volatile isothiocyanates evaporate or react with oxygen once the leaf is cut or bruised.
