Batter and coating mixes are, at their simplest, pre-formulated dry blends designed to create a crust or outer layer on food products prior to cooking. But reducing them to just "flour and spices" misses the point. A commercial batter mix is an engineered system of starches, proteins, leavening agents, and seasonings, each with a specific role to play in the final texture, appearance, and yield of a cooked product. To understand these mixes is to understand the physical and chemical reactions that turn a liquid slurry and a piece of protein into a cohesive, golden-brown, crispy piece of food.

The most common misconception is that all batter and coating mixes are fundamentally the same. This is false. A tempura batter, which is light and delicate, relies on a low-protein flour like cake flour or wheat starch to minimize gluten development, which would otherwise create a tough, chewy crust. In contrast, a fried chicken coating is often built on a base of all-purpose or high-gluten flour because the strong gluten network provides structural integrity and a thick, craggy crunch. Meanwhile, a cornmeal-based breader uses coarse particles that absorb less oil and yield a very different, more granular texture. The selection of the base flour is not an accident; it is the first critical decision in a mix formulation.
