The Working Edge
A dough wheel is a cutting tool that parts soft, sticky, and often laminated dough without dragging or deforming it. It seems simple: a blade on a handle, rolled across dough. But the behavior of that blade across a sheet of pastry, a crust edge, a pizza skin, or a strip of fresh pasta determines the quality of the product and the speed of the worker. A dull or poorly designed wheel crushes the dough's layers instead of slicing them, pinches the edges together, and leaves a ragged, sealed seam where you wanted a clean cut. This is not a cosmetic issue. In laminated doughs like croissant or puff pastry, a crushing action seals the delicate layers at the cut face, restricting oven spring and producing an uneven, heavy edge. In pizza, a dragging wheel will pull the toppings with it and displace sauce, creating an inconsistent bake.
Understanding how a dough wheel works begins with its edge. The blade terminates in a continuous circle, and the contact point where that circle meets the dough is where all cutting happens. Unlike a knife, which uses a linear, pull-or-push motion, the wheel uses a rolling, perpendicular force. The cutting occurs as the downward pressure concentrates onto the thin line of the blade edge. When that edge is sharp, the pressure splits the dough along the line of contact. When it's dull, the pressure instead compresses the dough beneath it, pushing it down and
