Chapter 1: Understanding Electric Griddles & Grills

An electric griddle or grill is a cooking appliance that uses electricity to heat a flat, continuous metal surface from below, transferring heat directly to food through conduction. This is a deceptively simple description. The device's value in a professional kitchen or a serious home cooking setup is not in its basic mechanism, but in its ability to provide a large, thermally stable, and highly controllable cooking area. Unlike a stovetop with separate burners, the griddle offers an unbroken sheet of heat. This allows you to cook a wide variety of items simultaneously at the same temperature, manage them in an orderly sequence, and build a workflow around a single cooking surface.

The core of the appliance is the heating element. This is most commonly a tubular metal sheath, usually made of a nickel-chromium alloy like Incoloy, that contains a resistance wire. When electricity passes through this wire, its resistance to the current generates heat. The heat is then conducted from the element, through the sheath, and into the mass of the griddle plate itself. The arrangement and density of these tubular elements directly determine the unit's heating characteristics. A basic, budget-oriented griddle might use a single, serpentine element looped back and forth. A more serious unit will use multiple, independent elements.
