Food steaming bags are airtight, heat-tolerant pouches used to cook food by trapping steam inside a sealed environment. They are not the same as storage bags, nor are they identical to sous-vide pouches, though they share some DNA with both. The core difference is the cooking medium: sous-vide immerses a sealed bag in a water bath at a precisely controlled temperature, while a food steaming bag is placed in a steamer, microwave, or combi oven where hot, saturated air or direct microwave excitation generates the heat. The bag's job is to create a self-contained micro-environment that retains the moisture released by the food, allowing it to cook in its own steam or in an added liquid, without the food sitting in a pool of boiling water.
This distinction matters operationally. When you cook vegetables in an open steamer basket, the steam circulates freely, and the food dries out slightly at the surface. The leach from the vegetables falls into the water below, a loss of flavor and nutrients. In a closed steaming bag, nothing escapes. The water that leaves the food stays trapped around it, creating a saturated atmosphere that cooks rapidly and evenly while preserving soluble vitamins and volatile aromatic compounds. This is why a bag-steamed piece of salmon will taste more intensely of itself than one steamed openly. It is not a subtle trick or a marginal improvement; it is a fundamentally different thermodynamics at work.
