Nutritional food purées are a controlled food product, not merely blended food. The distinction matters because the term "purée" is used loosely in home cooking, but in professional settings - hospitals, long-term care facilities, sports nutrition programs, and commercial food production - a purée is defined by measurable specifications: particle size, viscosity, water activity, nutritional density, and microbial stability. You need a reproducible process that delivers a consistent result every time.

At its core, a purée is a food matrix that has been mechanically broken down to reduce particle size and create a uniform, homogeneous mass. The mechanical process - whether achieved through a blade blender, a rotor-stator homogenizer, a sieve, or a combination mill - disrupts the cellular structure of the ingredient. This disruption releases intracellular fluids, reduces fiber structure, and creates a new rheological profile. The result is a semi-solid or liquid-like product whose behavior is determined by its viscosity, yield stress, and particle size distribution. These are not abstract concepts; they determine whether a product flows through a straw, holds its shape on a spoon, or passes a fork-drip test for dysphagia compliance.
