True watercress is the species Nasturtium officinale, a perennial member of the Brassicaceae family, which makes it a relative of cabbage, mustard, and radish. The plant is characterized by small, rounded, dark-green leaves held on hollow, floating stems. It is this hollowness that allows the plant to float in the slow-moving water of springs and streams, which is a key adaptation for its natural habitat. The "water" in its name is not a poetic flourish; it is a strict requirement for commercial production. While upland cress (Barbarea verna) is a distinct species cultivated in similar conditions, true watercress demands an environment where its roots are immersed in a constant flow of freshwater.
