I was hoping for a definitive answer on which colorants work best for high-heat candy applications, and this book did give me a framework for thinking about it. That said, I felt Chapter 1 spent quite a bit of time on the general importance of color in food perception, which was a bit abstract for my needs. I'm a practical person and just wanted the technical specs. It does get a lot more applied in Chapters 2 and 3, and the troubleshooting section is genuinely useful. It's a solid reference, but I think a completely novice person might find some parts too technical, while a pure expert might find the early rationale a little obvious.
